Rooted in Tradition: Cinzia Bergaglio’s Sustainable Wines of Piedmont

Cinzia Bergaglio remains the matriarch at the heart of her estate, with vineyards in the famous Piedmontese communes of Tassarolo and Gavi. Their verdant rows of Cortese, Barbera, and Dolcetto are farmed sustainably and vinified with care into bright and fresh wines. The viticulture involves minimal use of fungicide alongside green manure and a farm-produced fertiliser mix of herbs and vegetables. These are classic expressions of Piedmont wine.

A Cortese from the Gavi commune in Piedmont Italy that offers classic aromas of golden apple, acacia, and banana, with a fresh and mineral profile as well as subtle hints of almond blossom and fennel, ideal as an aperitif or paired with appetizers, fish, soups, and fresh cheeses.

'Rosaspina' Vino Rosso - nv

A Barbera and Dolcetto blend from the village of Tassarolo that offers a slightly spicy profile with notes of red berries and cherry, complemented by a velvety texture, a versatile wine that pairs well with both white and red meats.

Reviving a Legacy: The Natural Wines of Perego & Perego

Marco and Giorgio Perego dreamed of re-establishing their great-grandfather’s wine estate, a beautiful vision driven by natural winemaking, respect for their local terroir, and Oltrepo Pavese’s ideal climate for viticulture. The Perego & Perego farm is their realisation of that dream, covering an area of approximately 10 hectares, and is based in Rovescala the area where the borders of Emilia and Lombardy meet. During the time of the Greeks and Romans, it was written that the Oltrepo was a luxuriant land where the vine grew spontaneously in its natural habitat, and it seems as true today as it was over two millenia ago. Farming is organic with minimal pruning and tilling, and the wines have less than 10mg/L of added sulphur overall.

'Amber Demon' Provincia di Pavia IGT- 2021

An equal parts Riesling and Riesling Italico blend that is an orange wine in the Georgian amber wine style with typical fruity, earthy and savoury notes. Expect aromas of apricot, white balsamic vinegar, hay, apple skin, flat peach, and dried herbs, finishing with a gently bitter orange peel note, a unique choice for pairing with washed-rind cheeses, flatbreads, mezze dishes, and baba ghanoush.

'Akkanna' Provincia di Pavia IGT - 2021

A Pinot Noir Pet-Nat from the Oltrepò Pavese region that showcases ripe strawberry, raspberry, and red cherry aromas, complemented by shortbread biscuit notes. It is fruity, soft, and gently fizzy with a hazy, unfiltered appearance. Ideal as an aperitif, it also pairs well with fresh cheeses and light first courses.

'Il Barocco' Vino Rosso - 2017

A statement wine, showcasing the ancient terroir of Oltrepo Pavese to its apex, this complex Barbera-dominant blend carries scents of forest floor, spice, smoke, cocoa powder, hints of balsamic vinegar, ripe cherry, fig, blackberry, and plum. Rich, full-bodied, and serious, this is a true ‘Vino da Meditazione’, to be paired with well-structured red meat dishes and very mature cheeses.

Antica Fratta: A Franciacorta Icon Revived Through Craft and Cellaring Tradition

Antica Fratta is one of the most famous estates in Franciacorta, heralded for “el cantinù” – the local nickname for the remarkable underground cellar constructed by wealthy local merchant Luigi Rossetti in the mid-1800s to store many gently ageing bottles in perfect conditions. Today the estate is owned by Franco Ziliani, who has worked hard since 1979 to restore the former glory of this Italian icon. All of the wines are made with Chardonnay and Pinot Nero in varying proportions, with free run juice and only first pressings for added structure. Ageing on lees lasts a minimum of 24 months, up to 60 months for the flagship wine Quintessence, encapsulating the pursuit of quality above all else.

Cuvee Real Brut Franciacorta DOCG - NV

This elegant Franciacorta is a blend of majority Chardonnay and Pinot Noir and offers fresh and lively flavours with pleasant fruity and floral aromas. Expect notes of citrus, toasted bread, red apple, biscuit, and peach, perfect as an aperitif or paired with delicate fish dishes and white meats.

Essence Rosé Brut Franciacorta DOCG -2018

This Franciacorta Rosé, a blend of equal parts Chardonnay and Pinot Noir, has a refined pale pink colour and carries aromas of raspberry compote, biscuit, and small red berries, with a creamy texture. After three years of maturation on the lees, it is ideal throughout the meal, pairing beautifully with first courses, meat dishes, fish, cured meats, cheeses, and sushi.

Essence Nature Dosaggio Zero Franciacorta DOCG - 2018

This refined Franciacorta Brut Nature, a blend of majority Chardonnay and Pinot Noir, is round and rich, with intense flavours of spices and dried fruits such as apricot, complemented by persistent, fine bubbles. With three years of maturation on the lees, it is ideal as an aperitif and pairs beautifully with seafood and raw fish.

Weingut Hauck: Generations of Passion and Sustainability in the Heart of Rheinhessen

The roots of the Hauck family go deep, with the earliest ancestral records dating back to the year 1727. These origins lie in Bermersheim vor der Höhe, a small wine village in Rheinhessen and birthplace of Hildegard of Bingen, a renowned 11th century saint. Led by the father-daughter team of Jana and Heinz Günter Hauck, they tend daily to approximately 140,000 vines across 28ha of land in the middle of Rheinhessen, Germany’s largest wine region. Across the villages of Bermersheim vor der Höhe, Albig, and Ensheim, the vines grow on limestone, clay and loam-loess soils and they have a clear focus on sustainable viticulture. This is why they keep their carbon footprint as low as possible, including enhancing the vineyard soils by biodiverse greening to create more carbon-storing humus. Also, the energy needed in the wine cellar and warehouse is entirely supplied by solar power gathered from solar panels on the roofs of the winery buildings. As Jana summarises neatly, “You simply cannot produce good wine without a single-minded fixation for it. One thing is for sure, we‘re not lacking in the fanaticism department!”

Bermersheimer Klosterberg Riesling Alte Reben Trocken -  2023                          

A dry Riesling from the Bermersheimer Klosterberg vineyard in Rheinhessen, with aromas and flavours of green apple, nectarine, orange blossom, lemon zest, and lime juice, complemented by a mineral note and fresh acidity, ideal for pairing with grilled seafood, fish, green salads, and pad Thai.

Bermersheimer Hildegardisberg Riesling Spätlese - 2022                     

A medium-sweet Riesling from the Bermersheimer Hildegardisberg vineyard in Rheinhessen, featuring aromas of peach, apricot, fig, blossom honey, and lemon juice, with a refreshing balance of sugar and acidity, perfect for pairing with coconut-milk-based Thai curries, goat cheese, schnitzel, and sushi.

Ensheimer Kachelberg Riesling Auslese - 2023

This sweet Riesling from Ensheimer Kachelberg offers aromatic notes of honey, candied ginger, apricot, orange blossom, lemon zest, and candied fruit, balanced by high acidity, it pairs beautifully with ripe cheeses like Munster, lightly sweet desserts such as fruit tarts, and spicy Thai or South Asian dishes.

Spätburgunder Trocken - 2021

A Spätburgunder (Pinot Noir) with plums, cherries, vanilla, liquorice, clove, pine, woody spice, smoke, thyme, and boysenberry, matured in French and American oak, perfect for pairing with barbecue, duck, and meat stews.

Château Barbanau: Reviving Provence with Biodynamic Passion and Coastal Terroir

The lands of Provence were first carpeted with grapevines by the Romans as they spread into France, likely by those who inhabited the fort of Rocca Fortis, now the castle of Roquefort. Nearby, and in ruins at the time, Château Barbanau was lovingly restored by mountain guide Lucien Cerciello and his wife Claude Bodin in 1989, and they painstakingly converted the land to organic and biodynamic farming. Lucien still lives on the grounds but today the estate is cared for by Romain Tchénio and his wife Barbara. With 27 hectares spread across the rare Cassis AOC and Côtes de Provence AOC the spirit of Barbanau symbolizes their love and respect for nature and terroir. The style is a little darker and gutsier than classic Provence poolside pink, to better reflect their warm, dry, coastal scrubland home tucked in amongst the Côte d’Azur.

'La Girafe Verte' Côtes de Provence AOC - 2023

A blend of majority Cinsaut, Syrah, and Grenache Noir from organically and biodynamically farmed vineyards in Provence, with a nose of citrus, red fruits, spices, and Earl Grey tea, balanced by a refreshing finish, ideal for pairing with tomato salads and seabass ceviche.

Château de Callac: Tradition and Growth in the Heart of Graves

Founded in 1773, Chateau de Callac was originally a farmhouse with the surrounding land planted to 4 hectares of grain and vines. In the present day, Callac now tend to over 40 hectares of vines in the Graves appellation, producing dry white and red wines. They produce traditional styles, including an oaked white, and began conversion to organic viticulture in 2022. Chateau de Callac is owned by Mathieu Gufflet of Chateau Guiraud, who has recently added a Sauternes, Chateau Saint-Michel, to his winemaking properties. This is a 3 hectare estate atop the Bel Air plateau, producing a traditional style of botrytised sweet wine solely using Semillon.

The winery showcases its wine making skills using the philosophy of “nothing added, nothing taken away,” which minimizes unnecessary intervention in the process, and makes use of the incredible variety of the many vineyard “terroirs.”

Graves Blanc AOC - 2023

A blend of majority Semillon and some Sauvignon Blanc from 30-year-old vines in the Graves AOC, fermented in stainless steel tank and aged on the fine lees, offering crisp, dry flavours of peach, grapefruit, pear, and herbs, ideal with shellfish, fish, and spring vegetables.

'Prestige' Graves Blanc AOC - 2023

A blend of majority Sauvignon Blanc and some Semillon from 30-year-old vines in the Graves AOC, fermented and aged in stainless steel tank with oak staves, offering white peach, passionfruit, and grapefruit aromas, ideal with shellfish, dover sole, or Thai green curry.

Graves Rouge AOC - 2020

A blend of Merlot, Cabernet Sauvignon, and Cabernet Franc from 30-year-old vines in the Graves AOC, fermented in stainless steel tank and aged with oak staves, offering blackberry, blackcurrant, plum, and earthy aromas, with subtle clove and vanilla, perfect with lamb, vegetarian moussaka, or aged gruyere.

Château Saint-Michel Sauternes AOC - 2018

A classic Sauternes AOC wine made entirely of hand-harvested Semillon berries with noble rot, fermented in 30% new oak and aged for 18 months, offering complex aromas of vanilla, candied fruit, citrus, and peach, with a rich, honeyed palate, perfect with foie gras, sweet desserts, or honey-based dishes.

Château des Bachelards: A Millennium of Terroir-Driven, Biodynamic Winemaking

Château des Bachelards is one of the most acclaimed estates in all of Beaujolais, with origins dating back nearly a millennium to the time of the Benedictine monks. Today the estate is also well-known in organic and biodynamic circles across Fleurie, Moulin-à-Vent, and Saint-Amour as their wines have been certified organic since 2007, and biodynamic since 2015.

The vines span 12 hectares with 6 hectares situated in Fleurie in a unique holding around the Château called Le Clos des Bachelards, enclosed by walls first constructed in the 11th century. It is considered the estate’s crown jewel due to its exceptional terroir with vines planted as far back as 1910 and is one of few monopole clos vineyards in Fleurie. Low-intervention cellar work and
sustainable viticulture are the watchwords of the estate, and they champion Gamay planted to high density (10,000 vines/ha), made with native yeast fermentation, and long, gentle ageing.

Château des Bachelards is a leading organic and biodynamic producer in the Fleurie cru, producing a juicy, fresh and elegant style of Gamay with bright red fruit and slight spice, matured in concrete and perfect for grilled fish, roast chicken, or pork with creamy mushrooms.

Paquerette Fleurie AOC - 2021

Château des Bachelards is a leading organic and biodynamic producer in the Fleurie cru, and their Paquerette wine is a serious, medium-bodied style of Gamay made using the same techniques as Burgundy winemaking resulting in black pepper, cinnamon, and floral aromas, ideal with peppered meats or crispy red mullet.

The family owned winery of Domaine Gayda is located in the foothills of the Pyrenees, surrounded by its organic vineyards. It is situated in the village of Brugairolles, 25km southwest of Carcassonne, making it a unique destination in the heart of the Languedoc region. The vineyards are treated with the utmost respect for the natural environment, with a focus on biodiversity to create a balanced ecosystem that is essential for sustainable production.

Gayda Chardonnay

Pale yellow with green reflections.
Aged with hints of vanilla supporting the Chardonnay.
Lively freshness with citrus notes transitioning to subtle vanilla nuances, finishing with a hint of almond bitterness.

Flying Solo Blanc

With a brilliant pale yellow color and silver reflections, this wine bursts with aromas of ripe apricot and white flowers, indicating the presence of Viognier. Notes of grapefruit and candied lemon suggest a refreshing taste. The palate harmonizes with subtle hints of yuzu, vine peach, and bergamot.

T’air D'oc - Sauvignon Blanc

The pale yellow color with green reflections gleams brightly. A lively nose of lime, citrus peel, and hints of exotic fruits characterizes this pretty Sauvignon from the South of France. The palate, generous and fruity, maintains a refreshing acidity unique to this sun-soaked terroir. This wine boasts exuberant aromas and freshness, making it a delightful accompaniment to a seafood platter by the beach, grilled cuttlefish, or sea bream with a hint of lemon.

Color: Pretty raspberry color with blackcurrant highlights.
Nose: Intense sensory experience with fruity and crunchy aromas of sun-drenched wild fruits, dominated by gooseberry and blackberry notes.
Palate: Harmonious balance between freshness and liveliness, with notes of redcurrant, cherry, and a distinct vegetal expression characteristic of Cabernet Franc.
Finish: Firm tannins offset by lovely vegetal character, with recognizable notes of green pepper and delicate spices like coriander, adding complexity.

Flying Solo

The wine showcases a blend of Grenache Noir and Syrah, offering a medley of red fruits on the nose with evolving fresh and vegetal notes. The palate is rich and aromatic, featuring sweet spices, liquorice, strawberry, Amarena cherry, and violet flavors. Soft tannins structure the wine, with a potential aging of 2 to 3 years, evolving towards jammy notes.

Gayda Grenache

Deep red color with purplish highlights. Complex nose with fruity notes of blueberry and blackcurrant, floral notes of violet and peony, and scents of black pepper and liquorice. Full-bodied and well-balanced palate harmonizing fruity aromas with pepper and hints of vegetation. Young tannins provide structure, leading to a rich and long finish.

T'air D'oc Syrah Igp Pays Doc

Intense and deep color with purplish reflections. The rich and powerful nose exhibits beautiful complexity while maintaining freshness and finesse, featuring notes of black fruits, blackcurrant liqueur, leather, and cocoa. The palate offers a pure expression of Syrah, with flavors of blackcurrant, licorice, and a hint of black pepper for added spice.

La Minuette Igp Pays D'oc

Appearance: This rosé displays a vibrant and luminous pale pink color, reminiscent of Provence.
Aroma: Delicate notes of almond blossom and red fruits, including raspberry and red currant, grace the elegant nose.
Palate: Tangy flavors of lime zest, Corsican clementine, and pink grapefruit dominate the palate, accompanied by subtle hints of white flowers. The crispness is complemented by a surprisingly long finish with a delicate bitterness.

L’intrépide, Flying Solo

Appearance: magnolia color, with salmon reflections.
Aroma: The nose offers a delightful bouquet of forest fruits, including raspberries, Mara des Bois strawberries, and redcurrants.
Palate: The palate is a delicious blend of red fruits, with a hint of English candy. It’s both gourmand and refreshing, with lively notes of red fruits and confectionery.

Our very own @donjuliobruno did a fantastic job in the studio, discussing the grand opening of Mercato Ilford (and our two new bars!!!!) and its role in MM’s broader regeneration project. He highlighted Mercato’s diverse food and drink offerings, the long-term planning behind the project, and our commitment to employing people on the London Living Wage.

Julio shared, “Ilford was the same, it was a car park, almost an abandoned car park that we rebuilt, together with the council there. We built this incredible place completely organically made, all recyclable, everything you see there is sustainable because we are a sustainable market. The food you have from Punjabi food, to Mexican food, the low and no cocktails from BeBeMe to anything Thai, Japanese food and all of that organic and sustainable.”
