Strong Roots, Restless Hands: The Legacy and Craft of Cellers Carol Vallès

Cellers Carol Vallès’ motto is “Strong roots, restless hands”.
After many years of production of family cavas, Joan Carol’s passion and ambition led him to found Carol Vallès in 1996. He decided to settle in the old farmhouse of Can Parellada, acquired by his grandparents more than 100 years ago, and today the estate has a phenomenal reputation for classic Cava, given long lees ageing to develop rich flavour.

'Guillem Carol' Cava Gran Reserva Brut Nature - 2018

This Champagne method Cava features aromas of gingerbread, almond, earth, mushroom, and stone fruits like peach and apricot, alongside orchard fruits of green and red apple and a herbal note of fennel. The palate is perfectly balanced with toast and brioche notes from long lees aging, and small, well-integrated bubbles provide an elegant texture. It is ideal as an aperitif and pairs excellently with white meat, fish, and seafood rice dishes like Paella and fish stew.

'Marrelenga' Cava Gran Reserva Brut Nature - 2017

This Champagne method Cava offers a complex nose with notes of vanilla, apple coulis, dried fruit, and toasted bread, while the palate features ripe fruit and caramel, complemented by toast and a buttery character from long lees aging. Fine, well-integrated bubbles provide an elegant texture. It is perfect as an aperitif and pairs wonderfully with hearty meats, stews, and seafood rice dishes like Paella and fish stew.

'Millenium' Cava Gran Reserva Brut (Limited) - 2013

This Champagne method Cava offers very complex aromas of fruit compote, brioche, toffee, ripe fruit, plums, and nuts, which evolve with air. The round and generous palate features small, almost imperceptible bubbles that are creamy and well-integrated. It pairs beautifully with creamy cheeses, foie gras, roasted birds like pheasant and duck, as well as traditional Penedès Rooster, and is excellent with desserts such as apple pie, and almond frangipane.
